Caramel Ice Cream Bombe Recipe

During the hottest of summer days, I try to see how long I can go without turning on the oven. Things are hot enough without the kitchen heating up. In our house that means lots of grilling with the occasional summer salad thrown in. While I love to bake, summer is a great time to dust off my favorite no-bake recipes. I have one here that is the perfect combination of ease and a nice presentation. It takes 10 minutes to throw together and is the perfect thing to bring to a get together. There might not be much gathering going on this summer, but your family will love this treat. Feel free to make this your own. You can mix up the cookies used for the outer layer and the possibilities are endless on the candy to mix in. If softening the ice cream to add the candy is one step too many, just buy your favorite ice cream. Moose Tracks or Cookies and Cream would be delicious. Of course, our Salted Caramel Sauce makes the perfect complement. Enjoy!

Caramel Ice Cream Bombe Recipe from Southern Caramel Prep time: 10 min //Freeze time: 8 hrs Serves 4-6

Ingredients:

 ¾ cup cookie crumbs (Oreo, Grahams, Ginger Snaps)

 2 Tablespoons butter, melted

 1 pint vanilla ice cream, softened

 ¼ cup crushed toffee bits

 1 jar Southern Caramel Sauce

Steps:

1. Line a 2-quart bowl with plastic wrap

2. Stir together cookie crumbs and butter. Press into bowl up the sides

3. Mix together ice cream and toffee bits.

4. Spoon over cookie crumbs and freeze 8 hours

Serve:

Invert bowl on a serving plate and carefully remove bowl and plastic wrap. Cut into slices and or wedges and serve with warm caramel sauce.
